After twenty years of working his way around the world, including lengthy stints in the best hotel and restaurant kitchens in America, Canada and Australia, Jean-Paul Salpetier arrived at The Greys in Brighton in 1992. The Greys is the only pub in the area to be recommended in the prestigious Egon Ronay guide. Before taking over St. Vincent Jean-Paul and Linda ran the restaurant at Hotel Casablanca in the Andalucian mountain village of Gaucin, Spain.

Jean-Paul’s menus are original, international and fun. He loves to create dishes with his native Belgian chocolate and beers.

Linda flew the world as a cabin crew purser for many years, developing her friendly and open approach in this demanding service industry. She is also a qualified beauty therapist and aromatherapist. Linda is well versed in the demands of running a small hotel. She spent the 3 years prior to becoming co-owner of the St. Vincent running front of house and the restaurant of the hotel Casablanca with Jean-Paul.
